It is produced entirely with Ribolla Gialla grapes, carefully picked and selected by hand. Fermentation takes place in steel tanks at a controlled temperature of 10 C. Subsequently, the second fermentation takes place in a pressurized tank according to the Charmat method, followed by a period of ageing in
